Though this form of probiotics may seem trendy and new, fermented foods have been part of human diets for thousands of years. Kombucha begins as a plain black or green tea, typically sweetened with white table sugar. Next, the symbiotic colony of bacteria and yeast (SCOBY) is added. SCOBY is a white or tan film that forms and becomes a gelatinous mat of cellulose on the top of the brew. The mixture sits for a week to 10 days to ferment at room temperature.
At this point, the yeast eats the sugar in the sweetened tea and creates a small amount of alcohol (less than 0.5%). The bacteria dissolves the yeast and releases carbon dioxide and acetic acid. The result is a low-sugar, low-alcohol (less than 0.5%), high-fizziness drink with a ton of flavor.
